Any thoughts on the best quality settings for converting videos to audio?

What are your thoughts on the best quality settings for converting videos to audio? I've been experimenting with a few different tools lately to get lectures and long-form discussions off video platforms. Sometimes the audio comes out sounding a bit flat, while other times the file sizes get huge for what seems like no real benefit. Is there a sweet spot, perhaps around 192k or 256k, that you all find works best for general listening without sacrificing too much clarity?

I've definitely noticed that balance between quality and file size can be tricky, especially when you're converting a lot of content. For spoken word like lectures or podcasts, I usually find that 128k or 192k is perfectly sufficient and keeps the file size manageable for my phone. However, if it's music or something with a lot of intricate sound, I tend to go for 256k or even 320k, as the difference is noticeable then. I consistently use a reliable youtube yt mp3 converter for all my conversions, since it lets me choose the quality easily and keeps the process simple. It's been my go to for getting good quality audio without too much fuss.
